We are thrilled to welcome special guest Mando Rayo, renowned Taco Journalist, food explorer, and street ethnographer. As the producer at IDENTITY, a channel dedicated to amplifying BIPOC stories, Mando has traveled across the U.S. to uncover the tastiest tacos and the rich narratives behind them. He will share his experiences and insights on how tacos serve as a powerful cultural exchange and storytelling medium.

Additionally, we are excited to feature a presentation by Laura Villareal on “Seed Saving & Texas Native Plants.” Laura will explore how traditional seed-saving techniques and the cultivation of native plants are vital to Texas’s food heritage and sustainability. Learn how these practices contribute to the diversity of flavors that define Texas cuisine and play a crucial role in maintaining ecological balance.
